The Traditional Rajasthani Chai Recipe

What does it taste like?
The Traditional Rajasthani Chai is an authentic Indian flavoursome recipe from the heart of the Pink City, Jaipur that gives the chai an exquisite taste that has been passed down from generations to generations with its smokey rich aromas and traditional sweet-spicy flavours. Introducing taste of authentic, smokey Indian spices passed down from generations.

How much spice to use?
1. Black Cardamom - 1 Pod
2. Black Pepper - 1/4 Teaspoon
3. Carom Seeds - 1/2 Teaspoon
4. Cinnamon Stick - 1 Stick
5. Cloves - 3 Cloves
6. Fennel Seeds - 1 Teaspoon
7. Green Cardamom - 5 Pods
8. Loose Tea - 1 Teaspoon

How to make it?
1. Lightly crush green and black cardamom pods before tossing into a pot with 1 cup of water
2. 30 seconds later add the carom and fennel seeds to enhance the sweetness and bitterness from these spices
3. As the flavours blend together by slowly simmering add the final spices - cinnamon sticks, cloves and black pepper to infuse together and enhance the warm, woody, sweet flavours
4. Bring to boil and add the loose tea - make sure you see the big bubbles and lots of rolling action in the pot
5. Optional - you can add Nutmeg and Ginger to extend the delicious flavours at this point
6. Simmer for further 2-3 minutes whilst enjoying the aromatic flavours up in the air
Add your choice of milk and allow the chai to blend together and simmer further for 2 minutes
7. Stir in your choice of sweetener, for traditional sweetness you can add ‘Jaggery’ source of sugar cane
8. The final step - strain into your beautiful mug and enjoy your delicious chai

Useful Information:
Milk Ratio: If you like your Indian chai thick/rich then add one full cup of milk. If you prefer thinner/light chai then add 1/2 cup of milk. You can use full fat, semi skimmed, soya, almond or even coconut milk - it’s your choice.
Batch Making: You can make a big batch of Indian chai by doubling the amount of spices, water, milk and simmering time.
Sweetener: You can use, sugar, maple syrup, or honey. For authentic sweetness in your chai you can use Jaggery, which is made from different types of Sugarcane. (This can be purchased from any Indian Grocery Store.)
