The Maharaja Chai Recipe

Makes: 2 cups of tea or 1 very large cup
Equipment required: Mortal & Pestle, Saucepan, Tea Strainer & Mug

What does it taste like?
The Maharaja chai is a robust infusion full of rich spice notes from cinnamon, cloves and nutty cardamon. The rich, heady spices of India mingle with the royal blend inspired by the legendary spice route. You will indulge in all the intense rich nutty spices.

What spices do I use?
1. Cinnamon Sticks - 1 Stick
2. Cloves - 3 Cloves
3. Fennel Seeds - 1 Teaspoon
4. Green Cardamom - 5 Pod
5. Loose Tea - 1 Teaspoon
 
How to make it?
1. Lightly crush green cardamom pods and place all the spices in a small pot with 1 cup of water
2. Bring to boil, add the loose tea and simmer for 1 minute
3. Optional - you can add chai to extend the delicious flavours
4. Simmer for 2-3 minutes
5. Add your choice of milk and bring to boil, then reduce the heat and keep simmering for 2 minutes
6. Stir in your choice of sweetener
7. Strain into your royal maharaja cup and relax

Useful Information:
Milk Ratio: If you like your Indian chai thick/rich then add one full cup of milk. If you prefer thinner/light chai then add 1/2 cup of milk. You can use full fat, semi skimmed, soya, almond or even coconut milk - it’s your choice.
Batch Making: You can make a big batch of Indian chai by doubling the amount of spices, water, milk and simmering time.
Sweetener: You can use, sugar, maple syrup, or honey. For authentic sweetness in your chai you can use Jaggery, which is made from different types of Sugarcane. (This can be purchased from any Indian Grocery Store.)
